Fruit Shortcake
Ingredients
- 240g butter, softened
- 150g sugar
- 1 teaspoon vanilla essence
- 2 cups flour, sifted
- 1 1/2 teaspoons baking powder
- 250g mixed berries, frozen
- 1 cup berry jam
- pinch cinnamon
Method
- Preheat oven to 175 degrees Celcius
- Cream butter and sugar
- Add vanilla
- Sift flour, baking powder and cinnamon; fold in until the mixture forms a dough
- Press 3/4 of the mixture into a slice tin; press flat with wet fingers
- Bake for 6-10 minutes until just set and very lightly golden
- Mix berries with jam; spoon over base
- Top with dollops of the remaining mixture
- Bake for another 25 minutes until golden and set
- Remove from oven; cool before slicing

Nice with cream, yogurt or ice-cream.
