Fruit Shortcake

Ingredients

  • 240g butter, softened
  • 150g sugar
  • 1 teaspoon vanilla essence
  • 2 cups flour, sifted
  • 1 1/2 teaspoons baking powder
  • 250g mixed berries, frozen
  • 1 cup berry jam
  • pinch cinnamon

Method

  1. Preheat oven to 175 degrees Celcius
  2. Cream butter and sugar
  3. Add vanilla
  4. Sift flour, baking powder and cinnamon; fold in until the mixture forms a dough
  5. Press 3/4 of the mixture into a slice tin; press flat with wet fingers
  6. Bake for 6-10 minutes until just set and very lightly golden
  7. Mix berries with jam; spoon over base
  8. Top with dollops of the remaining mixture
  9. Bake for another 25 minutes until golden and set
  10. Remove from oven; cool before slicing

Notes

Nice with cream, yogurt or ice-cream.
