Peach Chutney #1

Ingredients

  • 20 fresh ripe peaches, peeled and coarsely chopped
  • 3 cloves garlic, finely chopped
  • 4 medium onions, chopped
  • 2 1/2 c brown sugar
  • 2 1/2 c cider vinegar
  • 6 T lemon juice
  • 1 T salt
  • 1 1/2 t ground ginger
  • 1/2 t ground nutmeg
  • 1/4 t cayenne pepper

Method

  1. Put all ingreds into a large pan
  2. Boil, uncovered, for about an hour, or until mixture thickens; stir occasionally
  3. Pour into hot sterilised jars; seal when cold

Makes 8-10 jars
