Seseame Seed Prawn Toasts
Ingredients
- 225 g uncooked prawns, peeled
- 25g lard
- 1 egg white, lightly beaten
- 1 t finely chopped spring onions
- 1/2 t finely chopped root ginger
- 1 T Chinese rice wine or dry sherry
- 1 T cornflour paste
- 115-150g white sesame seeds
- oil for deep frying
- 6 large slices white bread
Method
- Chop prawns and lard together to make a smooth paste
- Mix with egg white, spring onion, ginger, rice wine and cornflour paste
- Spread prawn paste thickly on one side of each slice of bread
- Spread sesame seeds on a large plate or tray
- Press bread onto seed to cover thickly
- Heat oil in a wok until medium-hot
- Fry 2-3 slices of bread, spread side down, for 2-3 mins
- Remove and drain
- Remove crusts, then slice each into 6 or 8 fingers
