Seseame Seed Prawn Toasts

Ingredients

  • 225 g uncooked prawns, peeled
  • 25g lard
  • 1 egg white, lightly beaten
  • 1 t finely chopped spring onions
  • 1/2 t finely chopped root ginger
  • 1 T Chinese rice wine or dry sherry
  • 1 T cornflour paste
  • 115-150g white sesame seeds
  • oil for deep frying
  • 6 large slices white bread

Method

  1. Chop prawns and lard together to make a smooth paste
  2. Mix with egg white, spring onion, ginger, rice wine and cornflour paste
  3. Spread prawn paste thickly on one side of each slice of bread
  4. Spread sesame seeds on a large plate or tray
  5. Press bread onto seed to cover thickly
  6. Heat oil in a wok until medium-hot
  7. Fry 2-3 slices of bread, spread side down, for 2-3 mins
  8. Remove and drain
  9. Remove crusts, then slice each into 6 or 8 fingers
