Flaky Pastry
Ingredients
- 1 1/4 c flour
- 1 t baking powder
- 125 g cold butter
- 1/2 c milk
- 1 t wine vinegar or 2 t lemon juice
Method
- Stir flour and baking powder together
- Cut butter into 16-25 small cubes
- Chop or rub into flour, or process carefully, or grate
- Mix milk and vinegar; stand for 5 mins
- Add most of the liquid to the flour
- Mix, to make a moist dough which is firm enough to roll out with a little flour
- Roll out thinly (cut in half first if for a double-crust pie)
- Bake at 200C, lowering the temperature if browning too fast

Makes enough for a 20-23cm double-crust pie
