Confetti Rice Salad

Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 c oil
  • 1 c long-grain rice, pref basmati
  • 1/2 c red lentils
  • 3 T wine vinegar
  • 2 t green herbs stock
  • 2 t sugar
  • 2 t mixed mustard
  • 3 c boiling water
  • parsley, radishes, spring onions, peas, carrots, capsicum, celery, corn (opt)

Method

  1. Chop onion into pieces the size of rice grains
  2. Microwave onions, garlic and oil in a 2L microwave dish for 2 mins
  3. Stir in rice, lentils, vinegar, stock powder, sugar and mustard
  4. Add boiling water
  5. Cover, and microwave at 50% power for 20 mins
  6. Stand for at least 10 mins
  7. Add optional ingrds, chopped, if desired

Serve hot or cold
