Confetti Rice Salad
Ingredients
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1/4 c oil
- 1 c long-grain rice, pref basmati
- 1/2 c red lentils
- 3 T wine vinegar
- 2 t green herbs stock
- 2 t sugar
- 2 t mixed mustard
- 3 c boiling water
- parsley, radishes, spring onions, peas, carrots, capsicum, celery, corn (opt)
Method
- Chop onion into pieces the size of rice grains
- Microwave onions, garlic and oil in a 2L microwave dish for 2 mins
- Stir in rice, lentils, vinegar, stock powder, sugar and mustard
- Add boiling water
- Cover, and microwave at 50% power for 20 mins
- Stand for at least 10 mins
- Add optional ingrds, chopped, if desired
