Microwave Jam
Ingredients
- 1 lemon
- 500g fruit, chopped, stones and stalks removed
- 1 1/2 c (335 g) sugar
Method
- Juice lemon
- Put lemon juice and rinds, and fruit, into a large microwave-safe bowl
- Cook for about 6 minutes, stirring occasionally, until fruit softens
- Add sugar; stir well
- Cook for about 20 minutes, until setting point is reached
- Discard lemon rind
- Spoon into a hot, clean jar
- Add lid, then invert for 2 mins
- Turn upright to cool
