Sunny Toasted Muesli
Ingredients
- 4 c rolled oats
- 1 c dessicated coconut
- 1/2 c roughly ground nuts (almond, brazil, hazel etc)
- 1/2 c roughly ground seeds (sunflower, pumpkin)
- 1 t ground cinnamon
- 1/2 t turmeric
- 1/2 t ground ginger
- pinch salt
- 1 c finely chopped dried fruit (apricots, dates, currants etc)
- 1/3 c coconut oil or ghee
- 4 T honey or maple syrup
Method
- Combine dry ingred in a large bowl
- Heat honey and oil until combined
- Stir thoroughly into dry ingred
- Spread over a large baking tray
- Bake at 150C for 45-50 mins, stirring several times
- Cool, then store in an airtight container

Serve as is, or soak overnight for Bircher muesli
