Mango Chutney
Ingredients
- 2 c sugar
- 1 c cider vinegar
- 6 c mango pieces (4-5 mangoes)
- 1 onion
- 1/2 c raisins
- 1/2 c chopped dates
- 1 T minced ginger (or crystallised diced ginger)
- 1 t garlic
- 1 t mustard seeds (whole)
- 1/4 t ground chilli (or 1 T chilli sauce)
- 1 t cinnamon
- salt
Method
- Boil sugar in vinegar until dissolved
- Add remaining ingredients
- Simmer until syrupy and slightly thickened (45-60 minutes)
- Pour into hot clean jars
