Mango Chutney

Ingredients

  • 2 c sugar
  • 1 c cider vinegar
  • 6 c mango pieces (4-5 mangoes)
  • 1 onion
  • 1/2 c raisins
  • 1/2 c chopped dates
  • 1 T minced ginger (or crystallised diced ginger)
  • 1 t garlic
  • 1 t mustard seeds (whole)
  • 1/4 t ground chilli (or 1 T chilli sauce)
  • 1 t cinnamon
  • salt

Method

  1. Boil sugar in vinegar until dissolved
  2. Add remaining ingredients
  3. Simmer until syrupy and slightly thickened (45-60 minutes)
  4. Pour into hot clean jars
