Oliebollen
Ingredients
- 500g flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 25g fresh or dry yeast
- 1/2 liter warm milk
- 1 egg
- 1 liter oil (eg sunflower)
Method
- Dissolve the yeast and sugar in part of the milk and leave in a warm place until bubbles appear on the surface
- Sift the flour and salt into a mixing bowl
- Make a well in the top; pour in the milk and yeast mixture
- Stir through the flour, then add the egg beaten and mixed into the remaining milk
- Mix into a smooth dough
- Add little pieces of apple and/or raisins/currants if liked
- Cover bowl and leave in a warm place for about 1 hour
- Heat oil in a deep pan to 180 degrees Celcius
- Scoop dough with two spoons, and drop into hot oil until golden brown
- Drain on kitchen paper; serve sprinkled with icing sugar

Makes about 30 large balls Half recipe is nice for a smaller crowd; still use one egg
