Thai Red Curry Paste
Ingredients
- 1/4 onion
- 2 kaffir lime leaves
- 1 tablespoon sweet chilli sauce
- 4 cloves garlic
- thumb-sized piece of ginger
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 3/4 teaspoon ground coriander
- 1/4 teaspoon ground white pepper
- 2 tablespoons fish sauce
- 1 teaspoon sugar
- 3 dried birdseye chillies
- 2 tablespoons lime juice
- grated rind of 2 limes
- 1/4 cup coconut cream
Method
- Place all ingredients into a blender
- Process until smooth
- Fry for 1-2 minutes in a little oil, until fragrant
- Add the rest of the can of coconut milk, and bring to a boil
- Add other ingredients, such as cooked chicken, green veges, noodles
- Simmer until cooked through
