Thai Red Curry Paste

Ingredients

  • 1/4 onion
  • 2 kaffir lime leaves
  • 1 tablespoon sweet chilli sauce
  • 4 cloves garlic
  • thumb-sized piece of ginger
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 3/4 teaspoon ground coriander
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons fish sauce
  • 1 teaspoon sugar
  • 3 dried birdseye chillies
  • 2 tablespoons lime juice
  • grated rind of 2 limes
  • 1/4 cup coconut cream

Method

  1. Place all ingredients into a blender
  2. Process until smooth
  3. Fry for 1-2 minutes in a little oil, until fragrant
  4. Add the rest of the can of coconut milk, and bring to a boil
  5. Add other ingredients, such as cooked chicken, green veges, noodles
  6. Simmer until cooked through
