French Beans with Courgettes and Bacon
Ingredients
- 250g French beans, topped and tailed
- 4 rashers streaky bacon, rind removed
- 50g butter/margarine
- 1 small onion, finely chopped
- 2 medium courgettes, trimmed and sliced
- 3/4 tsp salt
- Pinch pepper
Method
- Cut beans into 2.5cm pieces
- Cook for 10 mins in boiling salted water; drain well
- Fry bacon in its own fat until crisp; drain well; crumble finely
- Melt butter and sauté onion until soft but not brown
- Add courgettes and stir-fry until just tender
- Stir in bacon, beans and seasoning
- Cook for 1 minute to heat through
