Slow Cooker Fish
Ingredients
- white fish fillets, about 500g (eg snapper, gurnard)
- 1-2 onions
- 2 cloves garlic
- oil
- 1 tablespoon flour
- 1-2 teaspoons curry powder
- pinch turmeric
- 1/2 teaspoon salt
- 1/2 can coconut milk, or coconut-flavoured evaporated milk
Method
- Oil slow cooker dish
- Heat oil in a small frypan, and saute onion and garlic until softened but not brown
- Add other ingredients except fish, and mix
- Dip fish into milk mixture, then into the slow cooker in a single layer
- Pour milk mixture over the top
- Bake on High for 1 hour
