Carrot, coconut, cashew and coriander salad
Ingredients
- 2 large carrots, grated
- 1 packet (~1 C) of sprouts (we used a mix of sprouted lentils and adzuki beans)
- 1/2 C raw cashews
- 1 bunch fresh coriander, chopped
- 1 Tbsp fresh grated ginger
- 1/4 C dessicated coconut (other forms of dried coconut such as threaded should work fine)
- 2 Tbsp rice vinegar
1 Tbsp soy sauce
optional: sunflower seeds, rice vermicelli, rice paper rolls
Method
Combine everything in a bowl... 'nuff said
