Carrot, coconut, cashew and coriander salad

Ingredients

  • 2 large carrots, grated
  • 1 packet (~1 C) of sprouts (we used a mix of sprouted lentils and adzuki beans)
  • 1/2 C raw cashews
  • 1 bunch fresh coriander, chopped
  • 1 Tbsp fresh grated ginger
  • 1/4 C dessicated coconut (other forms of dried coconut such as threaded should work fine)
  • 2 Tbsp rice vinegar
  • 1 Tbsp soy sauce

  • optional: sunflower seeds, rice vermicelli, rice paper rolls

Method

Combine everything in a bowl... 'nuff said
