Sushi

Ingredients

  • 1 cup rice
  • 1 1/2 cups water
  • rice vinegar
  • sugar
  • salt
  • filling, eg salmon, avocado, carrot, cucumber, sprouts, chicken, tuna

Method

  1. Microwave rice and water for 10-15 minutes, stirring after 5 minutes. Stand for 10 minutes, then tip into a large flat dish to cool
  2. Mix 1/4 cup rice vinegar with 2 teaspoons of sugar and 1 teaspoon salt, heat until dissolved, and sprinkle half the mixture over the rice. Mix in with a wooden spoon, and fan rice until cool
  3. Place nori sheets shiny side down. Dip hands into remaining mixture, then pat rice onto nori sheets, leaving a clear space at the top
  4. Place filling along the sheet, about 1/3 up from the bottom
  5. Roll sushi, dampening nori with rice vinegar mixture before sealing
  6. Put finished rolls into the fridge to harden before cutting into slices. Dip knife in rice vinegar mixture to clean between cuts
