Asparagus

Ingredients

  • 1 bunch of asparagus (about 1 pound)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 teaspoon lemon zest
  • salt and pepper

Method

  1. Rinse asaragus thoroughly, breaking off tough portions from the bottom
  2. Cut into 1-2 cm portions, on a slight diagonal
  3. Add to a pan of boling water, then simmer for 2 minutes
  4. Drain, and add other ingredients while hot

Notes

Serve warm or at room temperature
