Christmas Cake

Ingredients

  • 1 pound butter
  • 1 pound sugar
  • 2 pounds flour
  • 3 teaspoons baking powder
  • 1 pound sultanas
  • 1 pound currant
  • 3/4 pound candied peel
  • 8 eggs
  • 1 cup brandy
  • 1 teaspoon mixed spice
  • 2 teaspoons mace
  • 2 teaspoons vanilla essence
  • 1/2 teaspoon salt
  • milk

Method

  1. Soak fruit in brandy, salt and spices, preferably overnight
  2. Cream butter and sugar
  3. Add eggs one at a time
  4. Sprinkle over sifted flour and baking powder
  5. Top with fruit, and mix
  6. Add a little milk if needed to make a batter consistency
  7. Bake at 150 degrees C for 3-4 hours, in a well papered and greased 8 inch square tin
