Coffee (and other flavours) Icing

Ingredients

  • 25-50g butter
  • 175g icing sugar
  • 1 tablespoon coffee essence
  • 1/2 teaspoon vanilla essence

Method

  1. Melt butter
  2. Add sifted icing sugar and other ingredients
  3. Beat well, then spread on cake

Notes

Add 1 tablespoon of cocoa to the icing sugar, and replace the coffee essence with water, to make chocolate icing. For butterscotch icing, melt 1/2 cup brown sugar and 6 tablespoons butter. Slowly add 1/3 cup milk, and cook for 2 minutes. Add 1/2 teaspoon vanilla essence and 1 1/2 cups icing sugar, and beat until thickened.
