Spiced Sugar-Glazed Corned Beef

Ingredients

  • 1.5-2kg piece of corned beef with a good fat layer
  • 1 onion, peeled and halved
  • 2 carrots, washed and chopped
  • 1 bay leaf
  • 1 tablespoon whole cloves
  • 1/2 cup brown sugar
  • 1 teaspoon mustard powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • juice of 1 lemon

Method

  1. Turn a slow cooker onto low to pre-warm, then add the corned beef
  2. Scatter the onion, carrots and bay leaf around the meat
  3. Add enough cold water to cover, then cover with the lid and cook on low for 7-9 hours (otherwise, place all ingredients into a large suacepan and simmer for 1 1/2-2 hours)
  4. Turn off slow cooker, and leave to cool in the liquid for 2-3 hours (wrap and refrigerate overnight if required)
  5. Preheat the oven to 180deg C
  6. Line a deep-sided baking tray with foil
  7. Place the meat on the tray, then stud with the whole cloves
  8. Mix brown sugar, mustard, cinnamon and allspice with the lemon juice
  9. Spread half the mixture over the beef
  10. Bake for 1 hour, basting occasionally with the remaining glaze
  11. Serve with your favourite veges
