Jelly Slice

Ingredients

  • 1 packet wine biscuits
  • 200g melted butter
  • 1 tin sweetened condensed milk, chilled
  • juice of 2 lemons
  • 1 tablespoon gelatin
  • 1 1/2 cups boiling water, plus 1/2 cup
  • 1 packet red or green jelly

Method

  1. Crush biscuits, mix with melted butter, then press into a swiss roll tin; chill
  2. Dissolve gelatin in 1/2 cup boiling water
  3. Mix condensed milk with lemon juice, then add gelatin mixture
  4. Pour onto base; chill until set
  5. Dissolve jelly in 1 1/2 cups boiling water; cool to room temperature, then pour over base
  6. Chill until set, then cut
