Walnut Carrot Cake

Ingredients

  • 3 cups finely grated carrot
  • 1 cup chopped walnuts
  • 4 eggs
  • 2 cups flour
  • 2 cups caster sugar
  • 1 1/4 cups oil
  • 2 teaspoons baking soda
  • 2 teaspoons mixed spice
  • pinch salt

Method

  1. Combine all ingredients and beat until smooth
  2. Pour into a well-greased and lined tin
  3. Bake at 180 deg C for 1 hour

Notes

Cream cheese icing: beat 125g cream cheese, 50g butter and 2 cups of icing sugar and spread over the cake
