Spice-Crusted Baby Potatoes

Ingredients

  • 1kg baby new potatoes, scrubbed
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon celery salt or sea salt
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • aoli, to serve

Method

  1. Preheat oven to 220 degrees Celcius
  2. Par-boil potatoes for 5 minutes in enough salted water to cover. Drain and leave to cool. Dry with a clean cloth
  3. Grind coriander and cumin seeds in a mortar or spice grinder. Mix with remaining spices and salt
  4. Whisk oil, vinegar and spices together in a bowl
  5. Place potatoes on a large baking sheet, pour over the oil mixture, and toss well to coat evenly
  6. Bake for 15-20 minutes until tender
  7. Pierce with cocktail sticks, and dip into aoli
