Bean Salad

Ingredients

  • 2 cans of beans (eg berlotti, red kidney), drained
  • 1 onion, chopped finely
  • 1 capsicum, chopped finely
  • 2 celery stalks, chopped finely
  • 1 1/2 cups sugar
  • 3/4 cup vinegar
  • 1/2 cup water
  • salt & pepper

Method

  1. Bring sugar, vinegar, water to a boil; cool
  2. Mix chopped vegetables with liquid
  3. Ideally marinate for 48 hours before use
