Lemon Curd

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 tsp chopped lemon rind
  • 1/2 cup lemon juice
  • 50g butter, chopped

Method

  1. Place eggs and sugar into a large microwave-safe jug or bowl (about 2L)
  2. Beat well, then add lemon rind & juice and butter
  3. Microwave in 1-minute increments, stirring each time, until thick (~9mins)
  4. Pour into hot dry jars and seal

Notes

Can use 6 egg yolks instead; can use other citrus juices
