Smoky BBQ Bean Mix

Ingredients

  • 1 Tbsp avocado oil
  • 1 cup diced white onion
  • 2 chipotle peppers in adobo, rougghly chopped
  • 1 tsp ground cumin
  • 1 Tbsp smoked paprika
  • 1 can black beans, drained and rinsed
  • 1/2 cup water or vegetable broth
  • 1 Tbsp maple syrup
  • 1/2 tsp salt
  • 1 Tbsp lime juice

Method

  1. Heat avocado oil in a large skillet over medium heat. Add onion and saute for 4 minutes.
  2. Add chopped chipotles in adobo, cumin, and smoked paprika. Cook for 1 minute.
  3. Add beans, water/broth, maple syrup, and salt. Stir and cook for 7-8 minutes.
  4. Add lime juice, stir, and adjust quantities of paprika/pepper/lime juice if desired.
