Banana & Chocolate Chip Muffins

Ingredients

  • 2 cups self-raising flour
  • 1/2 cup caster sugar
  • 1/2 cup chocolate chips
  • 1/2 tsp salt
  • 100g butter
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla essence
  • 1 cup (2-3) mashed bananas

Method

With a fork, stir together in a large bowl the flour, caster sugar, chocolate chips and salt.

In another container, melt the butter, remove from the heat, then add the milk, egg and vanilla and beat well.

Mash and measure the bananas and stir them into the liquid. Tip all the liquid mixture into the bowl with the dry mixture. Fold everything together carefully until all the flour is dampened, stopping before the mixture is smooth.

Spray 12 medium muffin pans with Chef Mate non-stick spray. Put about 1/4 cup of mixture into each cup.

Bake at 220 degrees Celsius for 12-15 minutes, until muffins spring back when pressed in the centre.

Notes

These can burn quite easily; you may get better results from using a slightly lower temperature and baking longer.

The chocolate chips can be substituted with chopped walnuts (half the amount).

Can also be baked as mini-muffins.
