Banana Bread #2

Ingredients

  • 3 bananas, very ripe
  • 1/2 cup oil
  • 3/4 cup brown sugar
  • 2 eggs
  • 1/2 cup coconut, shredded or dessicated
  • 1/2 cup chocolate chips
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Method

  1. Mash bananas in a large bowl
  2. Add oil and sugar; mix well
  3. Add eggs, coconut and chocolate chips; mix
  4. Add flour, baking soda and salt; stir gently
  5. Pour into a greased & lined loaf tin
  6. Bake at 170C for 1 hour, or until a skewer is clean when poked in
  7. Cool for a few minutes, then turn out onto a rack

Notes

  • can mash with a potato masher
  • can use self-raising flour
  • can make two small loaves instead
