HF Parmesan Chicken Strips

Ingredients

  • 6 potatoes
  • 600g green beans
  • 640g chicken breast (about 4)
  • 1/2 cup flour
  • 2 eggs
  • 110g panko breadcrumbs
  • 60g grated parmesan cheese
  • 100g smokey aioli
  • olive oil
  • salt & pepper

Method

  1. Preheat oven to 220C or 200C fan-forced
  2. Cut unpeeled potato into 2cm chunks
  3. Place on an oven tray lined with baking paper, drizzle with olive oil, and season
  4. Toss, then roast 25-30 mins until tender
  5. Slice horizontally through chicken breasts to make two steaks, then cut lengthwise into 2cm strips
  6. Place flour and a good pinch of salt & pepper into a shallow bowl
  7. Place breadcrumbs and cheese into another shallow bowl; mix
  8. Break eggs into another shallow bowl and whisk
  9. Dip chicken strips into flour then egg then breadcrumbs; lay on a plate
  10. Heat frying pan over medium-high heat
  11. Top and tail beans; add to pan with a splash of water and cook 4-5 mins until tender
  12. Transfer to a plate and cover with foil to keep warm
  13. Return pan to heat and add enough olive oil to coat the base
  14. When oil is hot, add some chicken strips and fry for 2-3 mins each side until golden and cooked
  15. Transfer to a plate lined with paper towel; continue until all strips are cooked
  16. Divide up potatoes, beans and chicken strips between plates; serve with smokey aioli
