Green Bean Salad with Mint

Ingredients

  • 500g young green beans
  • 1/2 cup mint leaves, roughly chopped
  • 1 large clove garlic, crushed
  • 4 tablespoons olive oil
  • juice of 1 lemon
  • salt & pepper

Method

  1. Top and tail beans
  2. Drop into a pan of boiling salted water and cook about 8 mins, until tender; drain
  3. Add to a bowl with the mint and garlic
  4. Add oil and lemon juice, with salt & pepper to taste; toss thoroughly

  • can serve at room temperature or hot
