Seared Lemon Chicken

Ingredients

  • 2 tablespoons olive oil
  • 4 x 100g chicken breast fillets
  • 1 tablespoon lemon juice
  • 2 garlic cloves, crushed
  • 1 teaspoon clear honey
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons chopped flat-leaf parsley
  • zest of 1 lemon

Method

  1. Place chicken breasts as a single layer in a shallow dish
  2. Mix lemon juice, garlic, honey, balsamic vinegar & 1 tablespoon of parsley with 1 tablespoon of olive oil
  3. Pour over chicken, turning breasts over until well coated
  4. Marinate in the fridge for 30 minutes
  5. Brush a nonstick griddle pan with 1 tablespoon olive oil; heat until very hot
  6. Remove chicken from marinade (reserve marinade) and add to the pan
  7. Sear for 1-2 minutes on each side until brown
  8. Lower heat, add marinade, and cook for 10 minutes until cooked through, turning once or twice
  9. Remove chicken and arrange on serving plates
  10. Grate lemon zest over, and sprinkle with remaining parsley
