Ginger Fish & Sassy Vegetables

Ingredients

  • 4 fish fillets, skinned & boned
  • 2 teaspoons paprika
  • 1 teaspoon ground ginger
  • 2 teaspoons garlic salt
  • 1 cup dried breadcrumbs
  • 1/4 cup sesame seeds
  • 125g ghee
  • 50g ghee
  • 2 cloves garlic, crushed
  • 2cm piece ginger, peeled & grated
  • 1 carrot, cut into sticks
  • 4 courgettes, cut into quarters
  • 10 beans, topped & tailed
  • 1/4 cup water

Method

  1. Cut fish into 10cm lengths
  2. Mix paprika, ginger, garlic, salt, breadcrumbs & sesame seeds in a bowl
  3. Melt first measure of ghee
  4. Dip fish into clarified butter then breadcrumb mixture
  5. Place on a baking tray, and bake about 30mins at 180C
  6. Melt second measure of ghee in same pan
  7. Add garlic and ginter; fry for a minute
  8. Add veges; fry for a minute
  9. Add water, cover pan; cook for 3 minutes
  10. Serve veges with the fish sticks
