Lamb Koftas

Ingredients

  • 600g lamb mince
  • 1 tsp salt
  • ½ tsp pepper
  • ½ red onion, grated or finely diced
  • 2 cloves garlic, minced
  • 1 tbsp spice mix
  • 1 tbsp flour
  • 1 egg

Method

  1. Mix all ingredients together
  2. Roll into golfball-sized balls, using wet hands
  3. Place on an oven tray lined with baking paper; sprinkle with oil
  4. Bake at 200C for 20-25 minutes until browned and cooked through

Notes

Spice mix: 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, ¼ tsp cinnamon, ¼ tsp cayenne pepper; mix together. Serve with Sumac yogurt dressing: 1 cup natural yogurt, 1-2 tbsp lemon juice, ¼ cup chopped mint and/or coriander; mix; sprinkle with 1 tsp sumac if desired Pilaf: heat 1 tbsp olive oil; cook ½ diced onion until soft; add 1 tbsp butter, 1 ½ cups long-grain rice and fry until rice is just starting to colour; add 3 cups chicken stock and 1 tsp sumac if liked; bring to the boil, then cover and cook on low for 15 minutes; leave to steam for a further 10 mins. Salad: ½ telegraph cucumber in thin strips; ¼ red onion sliced; ½ bunch radishes thinly sliced; ¼ chopped mint leaves; 3-4 tbsp chopped parsley; juice of 1 lemon; olive oil; salt and pepper; mix well
