Fish with Thai Flavourings

Ingredients

  • 2 tablespoons fish sauce
  • ¼ teaspoon salt
  • ½ cup lime juice
  • 2 bulbs lemongrass
  • 1-2 red chillis
  • spring onions, bunch
  • 4 kaffir lime leaves
  • 700g fish fillets
  • 3 tablespoons flour
  • oil
  • lettuce leaves
  • ½ cup coriander leaves
  • ½ cup mint leaves

Method

  1. Whisk fish sauce, salt and lime juice together in a small bowl
  2. Trim lemongrass, then smash to reveal pulp; chop only the pulp
  3. Slice chillis, removing seeds if preferred
  4. Slice white parts of the spring onions
  5. Shred lime leaves
  6. Add lemongrass, chillis, spring onions and lime leaves to dressing
  7. Rinse fish and pat dry; cut into manageable pieces and dust with flour
  8. Make a bed of torn lettuce leaves on a platter
  9. Top with coriander leaves
  10. Fry fish in hot oil until almost cooked through
  11. Place fish on top of the platter as it is cooked
  12. Whisk dressing and spoon over fish
  13. Scatter with chopped mint leaves
