Chilli

Ingredients

  • oil
  • 1 onion, chopped finely
  • 1 stick celery, chopped finely
  • 1 small carrot, chopped finely
  • 3 or 4 cloves of garlic
  • 125g mince (opt)
  • 400g tin of mexican beans
  • 400g tin of chopped tomatoes
  • 1Tablespoon cumin
  • 1 teaspoon ​smoked paprika
  • ½ teaspoon ​turmeric
  • ½ teaspoon ​cayenne pepper
  • 1 teaspoon ​ground coriander seeds
  • spring onions, chopped finely

Method

  1. Add your oil to a pot.
  2. Fry onion, celery, carrot and garlic on a slow heat until the onion and celery goes see-though. Wait until it goes soft and kind of mushy if you can be bothered.
  3. Add the mince if you are using; brown.
  4. Add the beans and tomatoes, the spices (adjust to your taste) and the spring onions.
  5. Bring to a simmer; heat through.

Notes

Serves about four people on baked potatoes, nachos, or in wraps.
