Lemon Slice

Ingredients

  • 125g butter
  • Grated zest of 2 lemons
  • 1 tin sweetened condensed milk
  • 100g chopped walnuts
  • 1 tbsp golden syrup
  • 250g wine biscuits, crushed

Icing

  • 100g butter
  • Juice of 2 lemons
  • 2 cups icing sugar
  • Soften butter, whisk until creamy.

Method

  1. Line a 17 x 27 cm tin with baking paper.
  2. Melt butter, condensed milk and syrup on low.
  3. Stir in zest, walnuts and biscuit crumbs.
  4. Spread in tin; bake 15-20 minutes at 180°C.
  5. Ice when cool, then cut into bars.
