Kumara Soup

Ingredients

  • 2 roughly chopped and peeled kumaras
  • 1/2 medium carrot, chopped
  • 1 tsp green curry paste
  • 1 chopped onion (Opt)
  • 1 chopped spring onion
  • 1 sprig chopped coriander
  • I large sprig chopped parsley
  • salt and pepper
  • 1 tsp curry powder
  • 1 can coconut milk
  • 500 ml chicken or vegetable stock

Method

  1. Put all vegetables into a large pot and cover with the stock.
  2. Bring to the boil and then simmer until all veges are cooked.
  3. Drain off liquid, reserving about 2 tablespoons.
  4. Blend veges in food processor/blender with herbs, curry powder, seasoning, curry paste and reserved liquid.
  5. Add the coconut milk a little at a time until soup is the required consistency
