Chinese Noodle Salad

Ingredients

  • 2 packets Oriental 2-minute noodles
  • Celery
  • Capsicums
  • Carrots
  • Spring onions
  • Mung beans

Dressing

  • 1/4 pottle Anathoth zucchini pickle
  • 1/4 cup white vinegar
  • 1/4 cup oil
  • 1 tsp curry powder
  • Oriental noodle flavour sachets

Method

  1. Cook the noodles as per instructions on the packet, without the flavor sachet.
  2. When cool, added sliced celery, capsicum and spring onions, grated carrots, and mung beans.
  3. Toss with dressing.
  4. Before serving, add 2 scoops of mixed roasted nuts.

Dressing

  1. Mix all together.
