Teriyaki Chicken

Ingredients

  • 1 T cornflour
  • 1 T cold water
  • 125g castor sugar
  • 1/2 cup soy sauce
  • 4 T cider vinegar
  • 1/2 t ground ginger
  • 1/4 t white pepper
  • 1 clove garlic, finely chopped
  • 12 skinless chicken thighs

Method

  1. Combine cornflour and water in a small pan
  2. Add sugar, ginger, pepper, vinegar then soy sauce
  3. Stir in garlic
  4. Bring to a simmer, stirring frequently, until thickened
  5. Place chicken in a baking dish; brush with sauce
  6. Turn over, then brush again
  7. Bake for about 30 mins, basting every 10 mins
  8. Turn over, then bake for a further 30 mins, basting every 10 mins
