Glazed Lamb

Ingredients

  • 450g boneless lean lamb
  • 1 T oil
  • 175g mangetouts, topped and tailed
  • 3 spring onions, sliced
  • 2 t clear honey
  • juice of 1/2 lemon
  • 2 T chopped coriander
  • 1 T sesame seeds
  • salt & pepper

Method

  1. Cut lamb into thin strips. using a cleaver
  2. Add oil to a wok; stir-fry lamb until browned all over; remove and keep warm
  3. Add mangetouts and spring onions; stir-fry for 30 seconds
  4. Return lamb to wok
  5. Add honey, lemon juice, coriander and sesame seeds; season well
  6. Stir thoroughly, then boil; bubble vigorously for 1 min

Notes

Serves 4 Can us pork, or chicked (substitute basil for coriander)
