Flaky Pastry

Ingredients

  • 1 1/4 c flour
  • 1 t baking powder
  • 125 g cold butter
  • 1/2 c milk
  • 1 t wine vinegar or 2 t lemon juice

Method

  1. Stir flour and baking powder together
  2. Cut butter into 16-25 small cubes
  3. Chop or rub into flour, or process carefully, or grate
  4. Mix milk and vinegar; stand for 5 mins
  5. Add most of the liquid to the flour
  6. Mix, to make a moist dough which is firm enough to roll out with a little flour
  7. Roll out thinly (cut in half first if for a double-crust pie)
  8. Bake at 200C, lowering the temperature if browning too fast

Makes enough for a 20-23cm double-crust pie
