Microwave Jam

Ingredients

  • 1 lemon
  • 500g fruit, chopped, stones and stalks removed
  • 1 1/2 c (335 g) sugar

Method

  1. Juice lemon
  2. Put lemon juice and rinds, and fruit, into a large microwave-safe bowl
  3. Cook for about 6 minutes, stirring occasionally, until fruit softens
  4. Add sugar; stir well
  5. Cook for about 20 minutes, until setting point is reached
  6. Discard lemon rind
  7. Spoon into a hot, clean jar
  8. Add lid, then invert for 2 mins
  9. Turn upright to cool
