Sunny Toasted Muesli

Ingredients

  • 4 c rolled oats
  • 1 c dessicated coconut
  • 1/2 c roughly ground nuts (almond, brazil, hazel etc)
  • 1/2 c roughly ground seeds (sunflower, pumpkin)
  • 1 t ground cinnamon
  • 1/2 t turmeric
  • 1/2 t ground ginger
  • pinch salt
  • 1 c finely chopped dried fruit (apricots, dates, currants etc)
  • 1/3 c coconut oil or ghee
  • 4 T honey or maple syrup

Method

  1. Combine dry ingred in a large bowl
  2. Heat honey and oil until combined
  3. Stir thoroughly into dry ingred
  4. Spread over a large baking tray
  5. Bake at 150C for 45-50 mins, stirring several times
  6. Cool, then store in an airtight container

Notes

Serve as is, or soak overnight for Bircher muesli
