Fresh Tomato Soup

Ingredients

  • 1-1 1/2 kg ripe tomatoes
  • 1 slice bread, broken up
  • 1 t salt
  • 1 T sugar
  • 1/2 t dried basil
  • 1/2 t dried oregano
  • 1-2 cloves garlic, chopped
  • 1 onion, chopped
  • parsley thyme or bayleaf (opt)
  • 2 t wine vinegar

Method

  1. Put tomatoes in a large microwave casserole, halving if large
  2. Add bread; sprinkle with salt, sugar, basil and oregano
  3. Add chopped garlic and onions and other herbs
  4. Cover and cook until tender and mushy (about 10 mins)
  5. Break up with a potato masher; stand 5 mins
  6. Shake and press through a coarse sieve
  7. Add vinegar; cover and chill

Notes

Stir in parsley and chives if liked, or cream, creme fraiche or sour cream, or croutons For juice, pour into glasses over ice. Add hot pepper sauce or worcestershire sauce, with a stirring stick of celery
