Oliebollen

Ingredients

  • 500g flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 25g fresh or dry yeast
  • 1/2 liter warm milk
  • 1 egg
  • 1 liter oil (eg sunflower)

Method

  1. Dissolve the yeast and sugar in part of the milk and leave in a warm place until bubbles appear on the surface
  2. Sift the flour and salt into a mixing bowl
  3. Make a well in the top; pour in the milk and yeast mixture
  4. Stir through the flour, then add the egg beaten and mixed into the remaining milk
  5. Mix into a smooth dough
  6. Add little pieces of apple and/or raisins/currants if liked
  7. Cover bowl and leave in a warm place for about 1 hour
  8. Heat oil in a deep pan to 180 degrees Celcius
  9. Scoop dough with two spoons, and drop into hot oil until golden brown
  10. Drain on kitchen paper; serve sprinkled with icing sugar

Notes

Makes about 30 large balls Half recipe is nice for a smaller crowd; still use one egg
