French Beans with Courgettes and Bacon

Ingredients

  • 250g French beans, topped and tailed
  • 4 rashers streaky bacon, rind removed
  • 50g butter/margarine
  • 1 small onion, finely chopped
  • 2 medium courgettes, trimmed and sliced
  • 3/4 tsp salt
  • Pinch pepper

Method

  1. Cut beans into 2.5cm pieces
  2. Cook for 10 mins in boiling salted water; drain well
  3. Fry bacon in its own fat until crisp; drain well; crumble finely
  4. Melt butter and sauté onion until soft but not brown
  5. Add courgettes and stir-fry until just tender
  6. Stir in bacon, beans and seasoning
  7. Cook for 1 minute to heat through
