Ingredients

Burgers

*buns *white fish raw, cut to size appropriate to fit on bun *mayonnaise *salad greens *coriander *tomato *plum sauce (recipe to follow) *spice mix (recipe to follow)

Plum sauce *Tablespoon of plum jam *half of a small tin of beetroot *shallot diced *teaspoon of oil *tablespoon of balsamic vinegar *tablespoon of beetroot juice from tin

Spice mix *x2 teaspoons of mild paprika *x1 teaspoon of chilli powder *x2 teaspoons of mustard power *1/4 tspn allspice *1/2 tspn ground coriander seeds *tablespoon of dried basil *tablespoon of dried thyme

Method

Plum sauce Make the plum sauce first, put all ingredients into a small pot and reduce mixture until it is syrupy, all the while stirring. let it sit to one side to cool and then go on to make the dried spice mix.

Spice mix Combine all ingredients into a container like a large shallow bowl or a wide lunch box bottom half. mix the ingredients together making sure it is well mixed and there is no lumps.

Burgers coat the fish in the dried mixture and then fry in a pan with oil and on a medium heat. Assemble the other ingredients onto the bun as you wait for the fish to cook all the way through. Use the plum sauce either on the base of the bun or dribbled over the fish. Make sure you have a generous helping of mayo so as to offset the spiciness of the fish.

Notes

  • sour cream or cashew-nut sour cream could be used as an alternative to mayo.
