Slow Cooker Fish

Ingredients

  • white fish fillets, about 500g (eg snapper, gurnard)
  • 1-2 onions
  • 2 cloves garlic
  • oil
  • 1 tablespoon flour
  • 1-2 teaspoons curry powder
  • pinch turmeric
  • 1/2 teaspoon salt
  • 1/2 can coconut milk, or coconut-flavoured evaporated milk

Method

  1. Oil slow cooker dish
  2. Heat oil in a small frypan, and saute onion and garlic until softened but not brown
  3. Add other ingredients except fish, and mix
  4. Dip fish into milk mixture, then into the slow cooker in a single layer
  5. Pour milk mixture over the top
  6. Bake on High for 1 hour
