Triple Chocolate Brownies

Ingredients

  • 300g butter
  • 3 cups brown sugar
  • 3/4 cup cocoa powder
  • 2 1/4 cups flour
  • 3 eggs, lightly beaten
  • 1 cup choc bits

Method

  1. Combine butter and cocoa and melt.
  2. Add sugar; mix well off heat.
  3. Stir in flour and eggs; cool slightly.
  4. Stir in choc bits (or sprinkle into pan)
  5. Pour into 20 x 30cm pan, lined with paper above the edges.
  6. Bake at 180°C for about 35mins until just set.
  7. Cool in pan.

Can ice with 250g cooking chocolate melted with 1/4c cream; refrigerate, stirring occasionally, for about 20min or until of spreading consistency. Ice brownie, then refrigerate until set.
