Easy Lentil, pumpkin and broccoli salad

Ingredients

1/4 pumpkin 1 broccoli 1 can brown lentils

optional: chopped fresh basil, baby spinach, baby rocket

Dressing: *2 Tbsp wholegrain or dijon mustard *2 Tbsp olive oil *2 Tbsp balsamic vinegar *1 Tbsp maple syrup

Method

peel and chop the pumpkin into 2cm cubes. steam for 10min until cooked chop broccoli and add to steamer for the last 3 minutes drain lentils and mix with pumkin and broccoli toss with dressing and serve
