Broccoli with Garlic Butter and Cashews

Ingredients

  • 1 1/2 pounds broccoli, cut into bite-size pieces
  • 3 tablespoons butter
  • 1 tablespoon brown sugar
  • 3 tablespoons soy sauce
  • 2 teaspoons white vinegar
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1/3 c chopped salted cashews (roasted if liked)

Method

  1. Place broccoli into a large pot with about 1 inch of water in the bottom
  2. Bring to the boil, and cook until tender but still crisp
  3. Drain, and arrange on a serving platter
  4. Meanwhile melt the butter in a small skillet over medium heat
  5. Mix in brown sugar, soy sauce, vinegar, pepper and garlic
  6. Bring to the boil, simmer gently until thickened slightly, then remove from the heat
  7. Mix in cashews, and pour over broccoli
  8. Serve immediately
